Does that whole stalk-like area disappear when the flower dies???

Yes and no. The ovary of the flower is at the base, right next to the plant. If its fertilized, most of the flower will dry up and the bottom 1/4 inch will turn into a "fruit". Otherwise, the whole thing will dry up and fall off.
